Ingredients
  • 50 g fresh basil leaves (roughly 2 handfuls)
  • 30 g pine nuts
  • 30 g strong cheese, grated (use dairy-free as needed)
  • 1 clove garlic, peeled
  • 100 ml olive oil
  • 1 pinch salt
  • 1 pinch black pepper
Instructions
  1. Toast the pine nuts: Heat a small dry frying pan over medium heat. Add the pine nuts and toast them for 1-2 minutes, shaking the pan frequently to prevent burning. Remove from the pan and let cool.

  2. Blend the ingredients: Place the basil leaves, toasted pine nuts, grated cheese, and garlic clove in a food processor.

  3. • Pulse a few times to break everything down.
  4. Add the oil: While the food processor is running, gradually pour in the olive oil until the mixture reaches your desired consistency (smooth or slightly chunky).
