Ingredients
    For the Bruschetta:
  • 2 slices gluten-free bread
  • 1 clove garlic, halved
  • 150 g cherry tomatoes, diced
  • 125 g mozzarella sliced thinly or torn into pieces
  • 10 basil leaves, roughly torn
  • For the Balsamic & Olive Oil Dressing:
  • 2 tbsp balsamic vinegar
  • 3 tbsp extra-virgin olive oil
  • Salt and pepper, to taste
Instructions
  1. Prepare the Bread: Preheat a grill or griddle pan on medium-high heat. Lightly brush the gluten-free bread slices with olive oil on both sides.
